Opening in the Collective at Escape: Dang Dude and Gallito Taqueria

The two concepts from Proper House Group are expanding to Escape Brewing’s upcoming food hall

What Now reported earlier this year on the upcoming Collective at Escape Food Hall, opening in Trinity. Helmed by John McGregor and Matt Thompson, Escape Brewing has yet to reveal the prospective opening date for their new food hall, but it’s going to be “the place to be in Trinity, FL.”

“The Collective at Escape will be the heartbeat of our community,” says Escape Brewing’s website. “You will be able to experience multiple options of chef driven, artisanal food combined with a cocktail focused Bar. The Collective at Escape is also attached to the award winning brewery, Escape Brewing Company, known for their award winning IPAs, fruited sours and lagers.”

As The Collective’s opening approaches sometime this summer, What Now will take a closer look at some of the concepts opening in the upcoming food hall as they are revealed.

Known for concepts like Rooster & the Till and the recently opened Ash and Alter Ego, Proper House Group will be bringing two of its current restaurant concepts to Escape Brewing’s upcoming Collective at Escape Food Hall. Proper House’s Asian-fusion brand Dang Dude and its taco concept Gallito Taqueria will open new locations at the Collective, says recent coverage by Creative Loafing Tampa.

Offering “creative takes on Asian food that are familiar, fun and delicious,” Dang Dude’s current location at Sparkman Wharf offers a menu featuring noodle dishes like Chilled Sesame Noodles (Napa cabbage, cucumbers, cilantro, chili crunch, creamy sesame dressing) along with Rou Jia Mo buns in varieties like Lemongrass Chili Chicken and Five Spice Braised Pork Belly. There’s also a selection of Boba Tea drinks.

With locations at Sparkman Wharf and the Joinery, Gallito Taqueria offers “Street Tacos, Quesabirria Tacos, Antojitos and more.” The Sparkman Wharf menu features Specialties like Quesabirria Tacos (2 chili braised beef tacos stuffed with queso blanco, onions, cilantro, and griddle crisp, served with a side of chili beef consommé for dipping) and the Puffy Taco (2 fried flour tortillas stuffed with ground beef, queso fundido, lettuce, sour cream and shredded cheddar).
