“If you love dynamic flavor combinations and dedication to fresh, seasonal ingredients, our ice cream is going to blow your socks off,” owner Stephen DiMare said in a press release quoted in the Creative Loafing coverage. “We like to take classic flavor combinations – sweet and savory – and bring them to the next level. We have tons of fun creating unique and craveable flavors!”

The Hyppo is known for offbeat ice pop flavors like Dark Roast Espresso, Blueberry Lavender Lemonade, Eggnog, and Ginger Plum. Opening in tandem with Mayday Ice Cream, the shop will be the ultimate stop for frozen desserts—and, accordingly, Mayday will be offering a wild limited-time ice cream flavor at the 627 Central Avenue location.

Andalusia, the new flavor, is “a Spanish olive oil ice cream infused with rosemary topped with flaky sea salt.”

The Grand Reopening celebration will be head from February 12th to February 16th, with a 50%-off promotion for ice cream and popsicles. You can follow @thehyppo on Instagram to keep up with all things The Hyppo.
