Milkster Nitro Creamery + Coffee prepares its ice cream in a most unusual way. A clue to the ice cream brand’s method is in the name: at Milkster ice cream is made to order, flash-frozen on the spot using liquid nitrogen.

“We take cream from a local farm and we actually turn it into ice cream right in front of you,” Justin, a Milkster franchisee, told What Now on Friday. “When you flash-freeze the cream, there’s no time for ice crystals to form, so it gives you a smooth, rich texture. It’s a really unique experience, with multicolored lights reflecting off the smoke from the liquid nitrogen.”

And that’s not the only application nitrogen finds at Milkster. The brand also offers nitro cold brew—and this particular location is emphasizing the brand’s coffee, opening early in the New Year at Clearwater Mall.

“It’s going to be a really fun atmosphere, somewhere to come in with the family, have a great cup of ice cream, and get a coffee,” said Justin. “There will be a plethora of seating, and wifi. It’s as much of a coffee shop as an ice cream shop. It really marries the two together.”

That marriage is at its happiest in the form of Milkster’s affogato, which is prepared with warm nitro coffee and nitrogen ice cream.

“This is something only milkster can offer. Not only can we make you a fresh liquid nitrogen ice cream but also nitrogenated coffee. It melts the ice cream and gives you that perfect, creamy texture.”

You can follow @milkster_inc on Instagram to keep up with this opening—and more to come! Justin says it’s too early to share specifics, but more locations are planned for the Tampa Bay market.
