Noble Tavern Off the Farm – the newest venture from Off the Cuff Concepts that brings together its two existing entities, Noble Crust and Fat Beet Farm Kitchen & Bakery – filed architecture permits a few weeks ago for the first floor of Tru by Hilton St. Petersburg, located at 1650 Central Ave, and is on track to open spring 2023, according to co-owner TJ Thielbar.

“That part of St. Pete is growing, and we feel really positive about the reconstruction that’s going up around that site. We’re pretty excited to hear different things that might be happening at Tropicana Field, and we’re looking forward to it,” Thielbar tells What Now Tampa.
According to the restaurant’s website, Noble Tavern “will blend our Noble Crust and Fat Beet Farm concepts together along with taking the atmosphere of a traditional old world tavern and wrapping it into modern design.”
Noble Crust, which bills itself as “deep south Italian,” currently has locations in Carrollwood, St. Petersburg, and Wesley Chapel, with a brunch menu that spans traditional favorites like avocado toast, shrimp and grits, and a southern eggs Benedict, as well as various sandwiches, pizzas, and salads. Meanwhile, the dinner menu features fire roasted pork chop, eggplant parmesan, and southern fried chicken.
Fat Beet Farm takes its cues from the farm-to-table movement, offering entrees like vegan veggie stuffed bell peppers, BBQ pulled pork, and lemon chicken, alongside the cranberry apricot dill chicken salad, white bean and kale soup, and more.
In addition to food, Noble Tavern will be serving up signature craft cocktails.
“It’s going to be a great little tavern with great quality music and food, and a place where you just want to hang out with your wife and have a good conversation with some great craft cocktails and some great plates,” says Thielbar. “It’s kind of a niche down there that we think we can do pretty well with, and have a beautiful outside patio as well.”
